Der Heiligenstein is revered by many wine enthusiasts as one of the finest vineyards in all of Europe, and for good reason. Perched on steep terraces composed mainly of desert sandstone and volcanic slate, this vineyard nurtures primarily Riesling vines. These vines produce wines that are powerful, mineral-driven, and possess incredible aging potential. The interplay between hot daytime temperatures and cool nights in this region imparts a vibrant acidity to the grapes.

The base wine undergoes a meticulous aging process, spending six months in large acacia wood barrels to enhance its maturity. In the spring of 2019, the wine was transferred to the bottle for its second fermentation, a crucial step in the creation of Sekt. The winemakers strive to prolong the aging process on the fine lees for as long as possible, aiming to achieve a delicate mousseaux and accentuate the unique elegance and minerality of this special vineyard site.

In the glass, the wine presents a medium yellow-green color with glimmering silver reflections, suggesting a wine of clarity and freshness. Its effervescence is persistent, with a fine and delicate mousseux that adds to its visual allure. The wine offers an enticing bouquet, with subtle hints of herbal spices mingling with notes of white stone fruit.

On the palate, the wine reveals good complexity and liveliness, with layers of flavors that unfold gracefully. The acidity is vibrant and multi-faceted, contributing to a dynamic and engaging mouthfeel. Delicate notes of passion fruit and bergamot emerge on the finish, adding an exotic twist to the wine's profile.
