The Steininger family has pioneered a novel method of sparkling wine production, which it is proudly referred to as "elementar." The process begins with the base wine undergoing its initial fermentation, where fermentation is intentionally halted to retain a portion of the grape's natural sugars. This unfined and unfiltered base wine is then introduced to a carefully selected strain of yeast, chosen specifically for its ability to complement the wine's intrinsic characteristics. The wine undergoes a second fermentation in the bottle, with the yeast converting the residual sugars into alcohol and carbon dioxide, naturally carbonating the wine.

Following fermentation, the wine rests on its lees, allowing for a period of maturation and development. Once deemed ready, the wine undergoes riddling, a process of gradually tilting and rotating the bottles to collect the yeast sediment near the bottle's neck in preparation for disgorgement.

During disgorgement, we abstain from adding a dosage, relying solely on the wine's natural carbonation to protect against oxidation. This minimal intervention approach preserves the purity of the wine, allowing its inherent flavors and aromas to shine through. The result is a sparkling wine of exceptional quality and character, with a rich golden hue and a distinctive, "elementar" flavor profile that captivates the palate.

On the nose, enticing aromas of ripe green apples, white pepper, and hints of citrus zest greet the senses. There's a subtle herbal note that adds a layer of intrigue, along with a touch of floral blossom, reminiscent of spring meadows. The palate is treated to a symphony of flavors. Crisp green apple and zesty citrus dominate, while underlying notes of white pepper and minerality provide depth and structure. The wine's vibrant acidity lends freshness and balance, accentuating its lively character. The finish is long and lingering!
