As wildfires spread across Spain and France this summer, winemakers are learning what California growers discovered the hard way: the fire itself is often not the biggest danger to a vintage. It's the smoke.
Fire can physically destroy trellising, irrigation lines, and even damage a vine's internal tissue, sometimes sapping its strength for years or forcing growers to replant entirely. But research from the Australian Wine Research Institute shows a subtler threat: volatile compounds carried in wildfire smoke can settle on grape skins and bind with natural sugars, forming compounds that don't show up until much later — during fermentation, aging, or even in the finished bottle. The result can be wines with unwanted smoky, ashy, or medicinal notes, and grapes become most vulnerable to this effect in the exact stretch between veraison and harvest, which falls squarely in the current fire season.
California's experience offers a preview of the economic fallout. Growers there found that smoke-related losses could outweigh the damage from flames themselves, and demand for smoke-taint testing and small-batch trial fermentations surged as wineries scrambled to determine whether a harvest was still sellable.
Heat, Drought, and Soil Add to the Strain
Smoke taint is arriving on top of an already stressed growing season. Elevated temperatures and water shortages are known to disrupt grapevine flowering timing, berry development, yield, and water needs — and researchers point to heat and drought as major factors behind France's disappointing 2025 harvest, even before this year's fires. Outdoor vineyard workers face their own risks too, with exposure to fine particulate matter in smoke capable of shortening workdays and squeezing an already tight harvest window.
Once a fire passes, the danger doesn't end. Mediterranean vineyard soils are especially prone to erosion in the year following a burn, and if heavy autumn rains follow the fires, the resulting runoff can strip fertility from the land and damage roads and plots for seasons to come.
A Feedback Loop Between Abandonment and Fire Risk
There's a twist: active vineyards themselves can help slow wildfires by breaking up the vegetation that fuels them and giving firefighters access routes. That protective effect disappears once a vineyard goes fallow. A documented case in Aude, France, illustrated this clearly — nearly 5,000 hectares of vines cleared over a single year removed a natural firebreak, and fire moved fastest through areas where cultivation had lapsed and scrubland had taken over.
That matters because Europe's vineyard footprint is already shrinking. EU-wide vineyard area declined in the past year, driven largely by uprooting in France and, to a lesser extent, Spain. If repeated fire seasons, rising insurance costs, and smoke-related uncertainty push more growers to abandon marginal land, the resulting scrubland could make future fires worse — a cycle that self-reinforces over time.
The Bigger Climate Picture
Climate scientists have long flagged the Mediterranean as especially exposed to warming and worsening fire seasons, and European climate researchers project further increases in extreme heat, drought, and fire risk even under moderate emissions scenarios. Fires themselves add to the problem: cumulative EU wildfire emissions this year have already reached several million tons of CO2, and severe fires can release more carbon than the land can reabsorb as it regrows.
The consequences reach beyond the vineyard gates. Wildfire smoke can travel hundreds or thousands of kilometers, with health researchers warning that its contribution to respiratory and cardiovascular illness may be substantially underestimated. For wine regions that also depend on tourism and seasonal labor, that pollution translates into real economic costs.
Longer term, several studies point to warm, dry Mediterranean growing regions gradually losing suitability for traditional viticulture, with cooler, more northerly areas becoming comparatively more favorable. This year's fires in Spain and France may turn out to be less an isolated disaster than an early signal of that broader shift already underway.
